Ingredients:
- 1 cup cooked quinoa
- 2 ripe bananas, mashed
- 1/2 cup peanut butter
- 1/4 cup honey
- 1/4 cup melted coconut oil
- 1 teaspoon vanilla extract
- 2 eggs
- 1 cup whole wheat flour
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup chopped nuts optional
Instructions:
Preheat the oven to 350F 175C
In a large bowl, mix together quinoa, mashed bananas, peanut butter, honey, melted coconut oil, vanilla extract, and eggs
In a separate bowl, whisk together whole wheat flour, baking soda, baking powder, and salt
Combine the wet and dry ingredients, stirring until just combined
Fold in chopped nuts if desired
Spoon the batter into muffin cups, filling each about 2/3 full
Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean
Allow muffins to cool in the pan for 5 minutes, then transfer to a wire rack to cool completely
